Home-Made Beans

Ingredients

  • 1 tbsp Olive Oil
  • 1 Brown Onion, finely chopped
  • 1 clove Garlic, crushed
  • 4 x shortcut bacon rashers, finely diced (Optional)
  • 2 x 400g tins of Chopped Tomatoes
  • 2 x 400g of Borlotti/Cannellini Beans, drained and rinsed
  • Pinch of Salt & Pepper to taste
  • 1 x tsp of Brown Sugar (Optional)
  • 2 x tbsp of chopped fresh Basil or Parsley OR tsp of Dried Parsley

Method

  • Heat oil in a pan over medium-high heat and add onion, garlic and bacon. Sauté until onion and bacon are lightly browned.
  • Add tinned tomatoes and simmer gently for a few minutes to thicken.
  • Add beans, salt, pepper and sugar to the pan and cook for another 5-10mins over medium heat.
  • Meanwhile, prepare your eggs as preferred and cook your toast
  • Stir through the herbs.
  • Serve on hot buttered toast (with the sides as specified in your plan).

SLOW COOKER: These can be made in the slow-cooker in advance Рwe love waking up to breakfast being already cooked! Place all ingredients in the slow cooker and cook on low for 6-8 hours. You can saut̩ the onion, garlic and bacon first if preferred
